Safeway here makes my favorite Pannini. The long wide white bread with sliced ham, sliced turkey, swiss cheese, cheddar cheese, and I throw on cut up diced dill pickles to add on. The bread uses dijon hot mustard to give it flavor and make it less dry. They melt the sandwich in the microwave for 30 or so seconds to melt the cheese a little, then onto the grill it goes for 5 minutes. They use one of those grills with the raised sections to give the sandwich darker lines. Forget what you call those grills. Makes a great sandwich.

the pannini, chibata(sp) i'd suggest is: pan roast some finely chopped fresh garlic(not minced in a jar) infuse that in mayo, just a schmear on the inside of the bread slices. Sliced pork tenderlion, smoked Provolone cheese, mild green chili strips, thin crisp smoked bacon, lettuce, tomato, red onion, that's it!
The key is, the tenderlion must be seasoned as the locals like it, sloooow roasted and juicy, thin to medium slices, chili's from a can if you must(we're spoiled out here) Mild, you want the flavor not the heat.
Fresh veggies of course.
regional favorite mayo.
If it wins, stuwee's Disco and Alternative Pannini, has a nice ring to it. I stole that from wikipideia:
"A track entitled "Paninaro" appears on Pet Shop Boys' albums Disco and Alternative."

Wow Stuwee, that's quite a sandwich. I don't think that would all fit in a Pannini, but a ciabatta bread one maybe. Was the bread you used anything special? Pannini's are the fancy way of saying grilled cheese sandwiches which are upscale then your regular grilled cheese. I don't know if you'd want to grill something with fresh veggies in them. Might make the sandwich mooshy. But the ciabatta one would work. Is your sandwich served hot or cold?
I also took foods in high school, but would hardly call myself a cook. My brother is a cook though and has worked in many restaurants.

I'm no chef, I like good food, I just made that sammie up as I typed (i was hungry) deffinately a ciabatta, I forgot to google the diff between the two. And it could be cold, could be warm, add the fresh veggies just before serving, lettuce on top so it doesn't wilt, if served warm, I'll add a grilled cheese version after I have a late lunch.......

Having been in the Biz many times, I hear ya bro, I was usually the head waiter type, folks would ask 'Are you the owner"? I'd say "Honey I'm not that big of a masocist":-oo! and I'll add it's hard to get good help anyday.

Fast Forward,
I'd like to make an addendum to my Pannini I posted above. I got another one yesterday and they don't put turkey in that one I posted. It also uses Deli Mustard which looks like thick Dijon to me.
